羊杂,又叫羊杂碎,羊下水,是大西北地区常见的传统风味汤类小吃,把羊头,蹄,心肝,肠肺以及羊血洗净,煮熟,切碎,加上葱,蒜,辣椒等调料,装入锅内,放一块羊尾油,还可另加细分条,煮好后,捞到碗里红白相间,热气沸腾,油而不腻,令人垂涎欲滴,是一道暖胃,驱寒的保健佳肴。
