永春咯摊是福建省永春县五里街镇的传统小吃,以猪内脏为主料搭配大骨汤底,采用类似火锅的围炉形式食用,其名称源于食材翻滚时发出的“咯咯”声(闽南语发音为Ko tua),已有两三百年历史,现为泉州市级非物质文化遗产。
饮食形式:多人围坐共享一锅,汤底以猪骨熬制,主料包括大肠头、灌肠、猪肝等内脏,辅以豆腐、青菜等,蘸永春老醋食用,最后下青菜并浇油提鲜。每人35元
